Ingredients

  • All-purpose flour - 150/ 1 ¼  cup
  • Milk powder- 23g /1 ½ tbsp 
  • Corn starch- 10g / 1 tbsp 
  • Salt-1.42g/ ¼ tsp
  • Baking soda-3g/ ½ tsp
  • Melted unsalted butter- 125ml/ ½ cup
  • Brown sugar-67g/ 6 tbsp
  • White Sugar-125g /6 tbsp 
  • Curd- 23ml/ 1 ½ tbsp
  • Vanilla essence- 4.2ml/1tsp
  • Rainbow sprinkles-35g/ ⅓ cup 
  • Rainbow sprinkles topping- 21g/ 2 tbsp

Instructions

  1. Preheat your oven to 180°C for 10 minutes and line the baking tray with parchment paper. 
  2. In a large bowl, use a hand mixer to whip together unsalted butter, white sugar, brown sugar, vanilla essence, and curd until the mixture is light and creamy. 
  3. Sift the flour, milk powder, cornstarch, baking soda, and salt into the butter mixture.
  4. Mix thoroughly until a dough forms.
  5. Add the rainbow sprinkles to the dough and gently fold them in until they are evenly distributed.
  6. Take a tablespoon of cookie dough, roll it into a ball, and flatten it to your preferred cookie size. 
  7. Sprinkle more rainbow sprinkles on top and place them on the baking tray. 
  8. Bake the cookies at 250°C for 10-15 minutes, or until the edges are golden brown. 
  9. After taking them out of the oven, let them rest for 5 minutes to firm up, then serve and enjoy!
