Eggless Tutti Frutti Cake

Eggless Tutti Frutti Cake is a vibrant and delicious dessert featuring sweet tutti frutti candies. It has a light and fluffy texture, and the main ingredients include all-purpose flour, tutti frutti, sugar, butter, milk, baking powder, and vanilla essence, with optional nuts or chocolate chips. Ingredients

  • Tutti frutti - 75g/ 1/2 cup
  • Butter - 113g / 1/2 cup
  • Powdered sugar (adjust to taste) - 60g / 1/2 cup
  • Pineapple essence - 2g / 1/2 tsp
  • Cardamom powder - 1g / 1/2 tsp
  • Flour - 90g / 3/4 cup
  • Cashew powder - 30g / 1/4 cup
  • Vanilla custard powder - 30g / 1/4 cup
  • Baking powder - 2g / 1/2 tsp
  • Salt - a pinch
  • Maida to coat - 15g / 2 tbsp

Instructions

  1. Preheat the oven to 180°C for 10 mins, line a baking tray with butter paper, and set it aside. 
  2. In a bowl, add the tutti frutti and then incorporate 2 tablespoons of flour. 
  3. Mix thoroughly until the tutti frutti is well coated and set aside. This step is crucial to prevent the tutti frutti from sinking to the bottom. 
  4. In another bowl, combine powdered sugar, pineapple essence and butter. 
  5. Mix until you achieve a smooth and fluffy consistency. 
  6. Now, sift in the all-purpose flour, vanilla custard powder, cashew powder, cardamom powder, salt and baking powder. 
  7. Mix partially until everything is combined.
  8. Add the coated tutti frutti.
  9. Mix until fully incorporated. 
  10. Transfer the mixture to a flat surface and shape it into a rectangle. 
  11. Cut the rectangular dough into two pieces and cling wrap the dough. 
  12. Refrigerate for 2 hours. 
  13. After two hours, use a knife to cut the dough into thick slices, approximately ¼ inch.
  14. Place the pieces on the baking tray.
  15. Bake in the preheated oven at 180°C for 15-18 minutes. 
  16. Serve and enjoy!
