Ingredients

  • Pineapple discs-10 pieces 
  • Chopped pineapple-165g/ 1 cup
  • Yogurt-250ml/ 1 cup
  • Honey - 30ml/ 2 tbsp
  • Pistachios (finely chopped)- 5
  • White chocolate- 35g/ ¼ cup

Instructions

  1. Blend the pineapple slices until they become a smooth pulp.
  2. Transfer the pineapple blend to a bowl and mix in yogurt, honey, and diced pineapple thoroughly. 
  3. Fill the popsicle moulds with the mixture, adding a stick to each and Chill in the refrigerator overnight for it to set properly. 
  4. In a microwave-safe bowl, place the chopped white chocolate. Microwave the white chocolate in 30-second intervals until melted, stirring well in between each interval. 
  5. Remove the popsicles from the moulds and dip them in the melted white chocolate. 
  6. Sprinkle chopped pistachios on top of the popsicles. Serve and enjoy!!

      How To Make White Chocolate Pineapple Popsicles

      Note: In the step-by-step directions shown here, I am showing the ingredient measurements for six large servings of White Chocolate Pineapple Popsicles. You can easily scale the recipe up or down as per your needs.

      1. Blend the pineapple slices until they become a smooth pulp.

      2. Transfer the pineapple blend to a bowl and mix in yogurt, honey, and diced pineapple thoroughly.

      Tap the mould gently before freezing.
      Why won’t my popsicles unfreeze?
      Run under warm water or let it sit at room temperature before unfreezing the popsicles.
      I do not have a popsicle mould, what can I use instead?
      You can simply use paper cups and secure it with ice cream sticks.
      What’s the difference between yogurt and curd?
      Yogurt is made with bacteria, it’s thick and creamy and has a tangy taste. Curd is when milk gets thickened using acid, it’s soft, crumbly and has a mild taste.
      Can I add other fruits?
      Yes, you can add mango, kiwi, strawberry, or any fruit of your choice.
