A white chocolate pineapple popsicle is a cool treat made with a blend of sweet and tangy pineapple puree and creamy yogurt. It's dipped in melted white chocolate for a crispy outer layer and finished off with chopped nuts on top.
Ingredients
- Pineapple discs-10 pieces
- Chopped pineapple-165g/ 1 cup
- Yogurt-250ml/ 1 cup
- Honey - 30ml/ 2 tbsp
- Pistachios (finely chopped)- 5
- White chocolate- 35g/ ¼ cup
Instructions
- Blend the pineapple slices until they become a smooth pulp.
- Transfer the pineapple blend to a bowl and mix in yogurt, honey, and diced pineapple thoroughly.
- Fill the popsicle moulds with the mixture, adding a stick to each and Chill in the refrigerator overnight for it to set properly.
- In a microwave-safe bowl, place the chopped white chocolate. Microwave the white chocolate in 30-second intervals until melted, stirring well in between each interval.
- Remove the popsicles from the moulds and dip them in the melted white chocolate.
- Sprinkle chopped pistachios on top of the popsicles. Serve and enjoy!!
