- Strawberries- 400g/ 2 cups
- Granulated sugar- 35g/ 3 tbsp
- Lemon juice- 15ml/ 1 tbsp
- Agar agar powder- 8g/ 4 tsp
- Lukewarm water- 60ml/ 4 tbsp
- White Chocolate- 170g/ ¾ cup
- Whipping cream- 375ml / 1 ½ cup
Instructions
White chocolate mousse
- In a bowl, combine 2 tsp agar agar with 2 tbsp lukewarm water and set it aside for 10 minutes to soak.
- In one bowl, combine ¾ cup white chocolate and ½ cup whipping cream.
- Melt the chocolate mixture using the double boiling method, stirring occasionally. To double boil, you need to put a heatproof bowl on top of simmering water, letting the gentle heat melt the ingredients without burning them.
- Add the soaked agar agar to the chocolate mixture and mix well. Simmer the agar agar along with the chocolate for 3-5 minutes.
- Allow the chocolate mixture to cool for 20-30 mins at room temperature, stirring occasionally to avoid skin formation, a crispy or firm layer forming on the surface of the chocolate mixture.

- Add a bit of whipped cream to the chocolate mixture and mix well to lighten the chocolate.
